the center of The Covey is a shiny, state-of-the-art 7 Barrel
Brewery. It's really hard
to miss. Like fine cuisine, the secret of fine brewing is in the ingredients. The beers brewed at The Covey are created from the same ingredients as the world's finest beers. Malts from Germany and England are mashed using classic single and step infusion methods. Hops from Bavaria, the Czech Republic, England and Washington State give the proper amount of bitterness for the style being brewed. Pure, laboratory cultured strains of yeast are used to impart the proper flavor profile. At every step of the process, Brewmaster Jamie Fulton uses his skills to create each batch, true to style, one batch at a time. Jamie never pasteurizes his beer and it is not exposed to oxygen.
