The Covey Restaurant
and Brewery is a reflection of Jamie's passions in life.
He loves good food, good beer and the outdoors.
Jamie
grew up in Cedar Hill, Texas, part of a family with a great
collection of wild game recipes. He also comes from
a long line of great shooters, showing this talent at an
early age.
He attended Trinity University in San Antonio, where
he was an All-American on the NCAA Championship Skeet Team.
While at Trinity, the idea of becoming a restaurateur began
to appeal to him. Between years at Trinity, he attended
the summer program at Le Cordon Bleu in London to hone
his culinary skills. He took advantage of being abroad,
traveling on the continent, where he was continually impressed
by the amazing variety and delicious flavors of beer.
Upon his
return for his senior year, Jamie began homebrewing and became
fascinated with the process and the product. After graduation,
he decided to pursue brewing. He got a job at the Blue Star Brewing
Company in San Antonio, under the direction of Head Brewer Joey
Villareal. Jamie then passed his entry-level exam from the Institute
and Guild of Brewing of London. After a few more months at Blue
Star, he attended the World Brewing Academy, a combined offering
of the Siebel Institute of Chicago and Doemens Brewing Academy
of Munich, Germany. Jamie graduated at the top of the class of
international students.
After
completing his training, Jamie got serious about opening
a restaurant. He began to sketch out the
perfect place to pair creative food with a variety of hand
crafted beers. The Covey Restaurant and Brewery is the
result of his
years of planning. Jamie wants you to enjoy the inventive offerings in food
and drink at The Covey. He also wants you to feel comfortable
and make The Covey your favorite place for food, beer and
conversation. He will be happy to answer any of your questions
